Fresh ginger pulled at “baby” stage is tender, juicy, and potent. It doesn’t need to be pealed, but also hasn’t been cured, so should be stored in the fridge and used within a week.
If you want to stock up, cut into chunks and put it in a ziplock bag in the freezer. Then you can pull out a piece and grate it into whatever you are cooking all winter!
